Happiness is... freshly baked muffins!
Today, let's bake fluffy and moist matcha and chocolate muffins!
I got my inspiration from 'HidaMari Cooking' for this recipe, and they turned out very delicious.
Ingredients for 12 large muffins:
160 g unsalted butter
100 g cream cheese (Philadelphia)
200 g cane sugar
4 eggs
20 g organic matcha green tea powder
20 g baking powder
440 g plain/all-purpose flour
160 ml full-fat/whole milk
30 g dark chocolate chips
30 g white chocolate chips
Coconut chips
Flaked almonds
Instructions :
Preheat the oven to 180 °C/356 °F.
In a large bowl, add cubed butter and soften it with a whisk, then add the cream cheese and mix.
Add the sugar, stir, then the eggs, one by one, and mix well.
Add the matcha tea powder, baking powder, half of the sieved flour and stir everything gently using a spatula.
Add half the milk, mix, then the other half of flour, and finish with the rest of the milk, mixing everything.
Add the dark and white chocolate chips, keep some aside for decoration, and mix.
Line paper muffin liners (if you don't have any, grease the muffin tin), and pour the batter.
Decorate with the remaining chocolate chips and a few flaked almonds on some muffins.
Bake for 20 to 23 minutes at 180°C/356°F.
Cool in the muffin tin for 5 minutes, decorate some muffins with coconut chips, remove to cool on a cooling rack, and serve.
